Oats Prawn

Few weeks back we happened to taste this dish from one of the sea-food restaurants here in Singapore. I am not very sure of the origin of Oats Prawn, however it seems to be pretty popular in Singapore. For a yummy combination of prawns and oats, read on. Make sure you choose one of the larger species of prawns like the Tiger prawns or the King prawns.

For the oats mix

  1. Oats - 1 cup
  2. Egg - 1
  3. Red Chilli - 2 (chopped)
  4. Garlic - 2 tsp (finely chopped)
  5. Curry leaves - few (coarsely chopped)DSC_0630 (Medium)
  6. Butter - 1 tbsp
  7. Oil - 3 tbsp (Sesame/Vegetable oil)
  8. Chinese Wine - 2 tbsp (or grape juice)
  9. Oyster sauce -  2 tbsp
  10. Salt - to taste

For marination

  1. Prawns - 300 gms (around 6-7 large ones)
  2. Corn flour - 1 tsp
  3. Fish masala - 1 tsp
  4. Turmeric powder - 1 tsp
  5. Chilli powder - 1 tsp
  6. Salt - a pinch

Method

Hold the prawn in one hand, use a scissors to cut out the tail, legs and the upper part of the head including the eyes. The rest of the shell can be left as is. Twist the prawn into a circular form and cut the portion of shell immediately below the head. Next, pull out the dark thick vein. Now, gently squeeze the head to remove the brown contents. Rinse the prawns thoroughly.

Marinate the prawns

Mix the prawns with turmeric powder, red chilli powder, fish masala, corn flour and a pinch of salt. Marinate it for around an hour.

Make the Oats Mix

Beat the egg in a medium sized bowl with salt added. Add red chillis, curry leaves, chopped garlic and oats to it and mix thoroughly.

Heat a pan on medium flame. Pour the prescribed amount of oil on to the pan. Shallow fry the marinated prawns on both sides. Once the prawns are cooked, remove them from pan. Turn the heat to low flame, add the butter to the pan. When the butter melts add the oats mix and continuously stir the contents using a fork or chopsticks. This has to be continued for about 10 minutes till the oats grains separate out. Finally add the shallow fried prawns and saute well. We should now have a mix of crispy oats and prawns.

Add oyster sauce and Chinese wine to give a tinge of sweetness to it, mix well. Turn off the heat and serve hot. You can choose to eat it with rice, we made it a slightly healthier combo by having it with corn and salad. 🙂
